Is a "MUST" practice to varnish completed art?

Artists, I need your wisdom. I have just completed a series of beautifully done sailboats in acrylic paint. I am afraid to varnish some of them for fear that the texture will look different. these paintings are going in a superior gallery. I am relatively new to all of this; I have been painting for just a little under 3 years, but my work is superior quality. I am hoping to sale many of them; Here's my question: should i varnish all of them, even if it's done in Matt? What's the varnish of choice for finished art such as sailboats--Matt, Satin, Gloss, high gloss, NONE? thanks in advance. Is a "MUST" practice to varnish completed art?
I do not varnish my acrylic paintings.
